I just bought a butternut squash for the first time. It's one of those things my mother would make but I never learned how to cook. Have any recommendations?

oh, it is so versatile! the super easiest way is to cut into cubes and microwave for about 10-15 minutes. put the cubes in a microwave safe dish w/a little water...then once they are soft, you can mash them up and add butter/brown sugar/cinnamon...any spice really! you could also roast it at 375 for 30-45 minutes...then mash...or puree into a soup...very very tasty and healthy! i also made them into french fries...i cut the squash into 'fry like' strips and roasted them @ 400 w/olive oil, salt, pepper and cayenne...keep turning them until all sides are roasted evenly...very very good!
